For dinner one night, while hubby was away, I made a lovely roasted chicken for Meg, mum, her hubby and I!
Now usually if I have left overs I’ll make some chicken soup, but with the weather getting warm I wasn’t really in the mood for soup!
So… instead I decided to make a chicken pot pie! I hadn’t made one in ages, but I have to say for a quick fix it turned out pretty good!
First I made a roux and then added some of the chicken drippings to make a lovely gravy!
Once I’d added a few bits and bobs and the gravy thickened a bit I mixed in some of the left over chicken and vegetables and poured it into a Pyrex dish!
I wasn’t sure what I was going to do for the topping and then I spotted them…
Pillsbury croissant rolls!!!
Woo Hoo!
So I layered the top of the yummy chicken pot pie mixture with those bad boys and put the whole thing in the oven until it turned a nice golden brown!
The end result was absolutely yummy!

Mmmmmmm….Love me some chicken pot pie. Have you ever tried the crock pot recipe and used Bisquick drops for the crust? Mmmmmmmm

Nope, but I Will have to look that up and try it! I usually use pie crusts! The Pillsbury croissants actually turned out pretty good! 🙂
