Friday Food Fight… Caprese Salad!

I’ve stopped procrastinating and I’m finally getting on the treadmill regularly to try to lose the weight I’ve gained over the last ten few years!

Today is day five of my treadmill endeavour and thanks to the encouragement of family and friends it’s going good.  I have a few aches and pains here and there  but that’s to be expected!

Along with exercising, I’ve been trying to keep my diet healthy too and a favorite salad of mine recently has been the Caprese Salad.

It’s really easy to make and super tasty!

Caprese Salad

3 slices of fresh mozzarella

3 slices of your favorite tomato

 (I like heirloom tomatoes or vine ripe)

a pinch of salt and a sprinkle of pepper

a drizzle of olive oil 

a splash of balsamic vinegar

fresh basil

  1. That looks delicious!!! I generally try to stay away from anything that is heavy in sugars and fats.

    I like my carbs in my diet but I am careful about the types of carbs I eat like brown rice, wheat breads…etc. and starches too, instead of eating regular potatoes, try sweet potatoes and balance your diet with more veggies and fruits.

    Lots and lots of water instead of sugary drinks and if you want a soda, stick to something like diet sprite or coke zero

    Oh and lean meats and lots of fish and poultry.

    It’s good to have red meat every once in a while but make sure its lean and the fat content is minimal.

    And yes, you can treat yourself to desert but only like once a week and a small amount, don’t over indulge.

    As long as you’re eating balanced and you exercise and hydrate well you’re good as gold!

    (sorry for the bible here! LOL)
