St. Patricks Day Mint Cupcakes

This year to celebrate St. Patrick’s Day Meggers and I had grand ideas for the type of cupcake we were going to make.  I had seen these really cute Hershey’s Kisses with green, minty centers and thought those would be fabulous to stick in the middle of a cupcake!  The only problem being, when we went this last week to grab a bag they were already gone, the Easter goodies were quickly replacing any and everything St. Patrick’s Day related! Seriously? 

So we set out on an adventure to find something else green and St. Patty’s Day worthy!  Meg spotted some green M & M’s and I grabbed a bag of Bliss that were a minty green.  Unfortunately the bag of Bliss never made it to the cupcake party, they were devoured by… umm… a Leprechaun?  YES! A Leprechaun in the night!

That’s my story and I’m sticking to it!

Right, where was I? 

Oh yes… cupcakes! 

 So we decided to crush the minty chocolate M & M’s and mix them through the cake batter!  Now Buddy Valastro, the Cake Boss,  would probably shake his finger at us for using a boxed cake mix, but I’ve not tried my hand making one from scratch yet!  Although, I do plan on trying it soon as my mum just gave me my first Kitchen Aide mixer, but I digress!

 After the cupcakes came out of the oven we put them on a cooling rack!  Ooo did you know Pillsbury has started putting their cake frosting in a can? Oh my goodness it made frosting these bad boys so easy and I’m all about easy! Finally we sprinkled a little green sugar on top and VOILA!  Chocolate Mint Cupcakes! Yum!

So here’s a recap of our ingredients…

  • Betty Crocker Super Moist Chocolate Fudge Cake Mix
  • 3 Eggs
  • 1 1/4 cups of water
  • 1/2 cup of vegetable oil
  • 1 Package of Mint M&M’s crushed
  • Pillsbury Easy Frost Decadent Fudge
  • Green sugar

 They were a yummy, quick and easy cupcake treat and so much fun to make!
